Spinach Smashed Spuds

Before adding bacon
Spinach tastes incredible in mashed potatoes. Cook 2 pounds peeled potatoes in boiling water until fork tender. I like red potatoes, skin on but any potato will work fine. Russet are also killer (peeled)
Meanwhile heat 1/2 cup whipping cream or milk and 2 tablespoons butter in medium saucepan to simmer; cover and set aside.
Drain potatoes. Add 4 cups (about 4 ounces) baby spinach to milk mixture; toss, cover and let sit 1 minute; add to potatoes; mash with potato masher. Add salt and pepper to taste.
I like bacon in my smashed potatoes. Cook bacon until crips and crush it in your hand and sprinkle into freshly smashed spuds. Sprinkle cheese on top for an added twist…
