Tomato Mozzarella (Caprese Salad)

Caprese Salad
The quickest and easiest recipe I know which works as a side for any of the other main dish and is the only one that I have that doesn’t contain meat protein of some sort.
This is why I consider it a side because I don’t eat a meal without some kind of animal part on my plate.
Don’t let it fool you until you try it because it is really flavorful. You won’t like it if you don’t like basil but who doesn’t like basil?
Ingredients:
The freshest tomatoes that you can find (preferably out of your garden)
Fresh mozzarella either a single ball or little balls. – FRESH Mozz- not aged. I have a recipe for that as well that I need to document online for my cookbook – another project I probably won’t get to for a couple more years lol.
Fresh basil leaves whole with stem removed
WHITE balsamic vinaigrette
EVOO (Extra Virgin Olive Oil)
White pepper
Directions – self-explanatory
If you look at the picture you can figure the rest out. Pour the vinaigrette and EVOO on the salad and tear into it!
You can also use black balsamic but the presentation suffers. The same goes for white pepper.
